The Cabaillère farm produces organic Limousine beef and veal.
The cows are raised according to the specifications of Organic Agriculture in the High Mountain zone, this sign certifies that the meat from La Ferme de la Cabaillère meets specific requirements for nutrition and animal welfare.

The herds are raised with great care and thus live to the rhythm of the seasons, of births and as close as possible to the surrounding nature.

The Cabaillère farm raises Limousine cows (meat breed) in the traditional way according to the customs of the ancestors:
the herd, which is made up of 100 mothers, practices transhumance from May 20 to October 20 on the high pastures located between 1400 and 1800 meters above sea level, under the benevolent eye of the cowherd.

The short circuit:
- The animals are raised on our farm then we take them to the slaughterhouse in Pamiers.
- They are cut in a specialized workshop close to the slaughterhouse.
- The delivery is ensured by our care with a refrigerated vehicle.

Traceability:
- Each animal has a passport indicating its age, breed, registration number (pink card) accompanied by a detachable green card indicating that it is in good health.
- This passport follows the animal and is given to the slaughterhouse upon arrival.
- Then a weighing ticket with a serial number corresponding to the number of the animal is given to us and follows the carcass.
- The cutting sheets take up this killing number.

Veal and beef are for sale ONLY on order.

The meat is marketed in boxes of 6 or 10 kg in the form of an assortment.
It is vacuum packed (individually), labelled, weighed and ready to eat or freeze.
