Don't worry, you don't need to have a bac +5 in the kitchen to make a good tailor (pronounce the "s")! The principle is simple: boiled potatoes with grilled country ham and fried eggs. Yum ? It's a dish that we like to make in Ariège when the rainy days arrive... it's comforting and super quick to make. 

The + of this recipe:

  • It is economical and we often have at least the potatoes and the eggs in the cupboards
  • It is adaptable at will, according to desires and seasons! For example, test with mushrooms (girolles, black trumpets, porcini mushrooms, etc.), onions, zucchini, Bethmale cheese, Pamiers coconut beans… you can also replace the ham with liver sausage. , typical of Ariège! In short, everything is good in the tailous, as we say back home!

The ingredients for 4 people

  • 350 g of potatoes
  • 4 slices of country ham (low salt)
  • 4 eggs
  • 8 croutons of stale country bread
  • 2 tablespoons of vinegar
  • salt and pepper
  • 1 clove of garlic
  • 2 tablespoons oil of your choice

Prep time

Peel the potatoes and cut them into large chunks. Immerse them in 1 liter of salted water and let them cook for about 15 minutes. They should be a little firm.

Meanwhile, prepare the green salad, ideally with a walnut oil vinaigrette.

Prepare the garlic croutons: peel the garlic clove and rub the stale bread with it. Add them to the salad and mix.

In a very hot skillet and with a tiny bit of oil, sear the slices of country ham for 1 minute on each side. To book.

Break the eggs, salt, pepper and add two tablespoons of vinegar.

Serve the potatoes with the ham and the eggs and the salad on the side. Add a little juice from the pan and enjoy hot!
